I'm skeptical of this particular technology, although it may be the right general way to go about it (I'm not familiar with their process).
I can say that innovations like this will probably be what do it; finally create nearly identical options, and fewer people will be resistant to the change.

The whole thing with the computer algorithm is weird. How the hell is it a problem computer scientists can solve:? Seems like you need to go by trial and error using chemists or chefs -- someone who understands textures, consistencies, flavors, etc
