Vegetarian to whole-foods vegan

Hi guys,

Great to have a forum to discuss plant-based foods! I've been a vegetarian for 3 years, haven't eaten meat in 14 years, and I've been on a journey to eat mostly plant-based whole foods for over a year.

My main motivator was, and is the animals. Lately, I've been very focussed on the environmental impact of diets. Mine, and what would be a "perfect" sustainable diet, here in Portugal.

Trying to balance this, with running (40-50km/week), and life in general (!) has also made me gain 7kg in the past year and a half, which I'd like to shed off in months to come.

Suggestions are welcome on all topics above! :)

Are you a competitive runner? That's a lot of running, I wonder why you do so much (given diminishing health returns).

Diminishing returns are still returns. Although I personally like to mix up my cardio training (cycling, running, swimming etc), for someone who really enjoys running (and knows to stop when feeling pain) it makes a lot of sense.
How to become vegan in 4.5 hours:
